ORIGIN HISTORY:
Coffee cultivation in the Philippines dates back to the mid-18th century, when Arabica plants were first introduced during Spanish colonial rule. By the late 1800s, the country had become one of the world’s leading coffee exporters, supplying beans throughout Asia and the United States. That momentum was eventually disrupted by coffee leaf rust, political instability, and decades of limited infrastructure that isolated many of the nation’s most promising coffee-growing regions.

Today, Philippine coffee remains exceptionally rare in the specialty market. Only a small portion of the country’s harvest reaches international specialty roasters, making each exported lot a reflection of years of rebuilding, collaboration, and renewed investment in quality-focused production.

FARM PROCESS:
This washed coffee was produced by the Balutakay Coffee Farmers Association (BACOFA), a female-led cooperative located on the fertile slopes of Mount Apo in Davao del Sur. Cultivated at high elevations in rich volcanic soil, the coffee benefits from cool mountain temperatures that allow cherries to mature slowly and develop greater balance and clarity.

At the cooperative’s shared processing facility, cherries are carefully sorted and washed to highlight structure, sweetness, and cleanliness in the cup. BACOFA’s commitment to quality improvement and community-focused production has helped position the region as one of the Philippines’ most promising emerging specialty coffee areas.

CUP PROFILE:
Expect a smooth and balanced cup with gentle citrus brightness layered against soft cocoa sweetness and subtle nutty depth. Notes of orange peel and almond create a clean, approachable profile supported by a medium body and refined finish.
